- 4 tablespoons of fish sauce. 

Detailed instructions on how to dry chicken with an air fryer

To make delicious and colorful dried chicken, please note to follow the detailed steps below: 

Step 1: Prepare chicken breast  

To remove the bad smell of chicken, you should soak the chicken breast in a little diluted salt water for 10 minutes. Then, take the chicken out, wash it with clean water and let it drain. 

Next, you should use about 2/3 of the ginger, lemongrass, onion and lemon leaves prepared above to boil with the chicken breast. Put the chicken and all the above ingredients in the stove with 500ml of water over low heat until the chicken is cooked and turns white, then turn off the stove and take out the meat. 

After the chicken has been cooked, let it cool down a bit and then shred it into bite-sized pieces. Note that shredding the chicken breast along the grain will make it less tough and more visually appealing. 

Step 2: Make chicken sauce 

Prepare a non-stick pan, then add 3 tablespoons of cooking oil and heat over high heat until the oil is hot, then add 100 grams of onion, 35 grams of minced garlic, and 35 grams of minced ginger to fry until fragrant. 

Then, add to the pan 4 tablespoons of fish sauce, 2 tablespoons of Korean chili powder, 2 tablespoons of oyster sauce, 1 teaspoon of five-spice powder, 1 teaspoon of curry powder, 1 tablespoon of annatto oil and 100ml of chicken broth with 4 washed chili peppers. 

Use chopsticks to simmer until the mixture boils, then season to taste. 

Step 3: Stir-fry chicken with sauce 


- Put the shredded chicken breast into the pan and mix well until the spices are absorbed into each piece of chicken, then turn off the stove. 
- Then, put the chicken in a food container, wait for it to cool down, then cover and put it in the refrigerator for about 3-5 hours. 
 

Step 4: Dry the lemongrass chicken with an air fryer 


- Next, take the chicken breast out of the refrigerator and put it in the tray of the air fryer. 
- Then, turn on the air fryer at 120 degrees Celsius and dry the chicken for 10 minutes. 
- If after 10 minutes you check that the chicken is not as dry as desired, continue drying for another 5-10 minutes. When the chicken is soft and fragrant, it is done. 

How to preserve dried chicken with lemon leaves to last longer 

To keep the dried chicken with lemon leaves from getting moldy, put the dried chicken in a glass jar and zip bag.
