Ingredients needed to prepare nem lui

- 500g minced pork
- 250g minced pork shoulder. 
- 20g diced fat
- 20-30 lemongrass stalks to wrap the spring rolls
- 2 tablespoons cornstarch. 
- 1 onion, 1 garlic  bulb
- Accompanying spices include : oyster sauce, seasoning powder, fish sauce, pepper, sugar, honey, annatto oil.

How to make grilled spring rolls with Tapuho steam fryer

Here are the detailed steps to make grilled spring rolls with a simple steam fryer:

Step 1: Mix the prepared ingredients 

Mix all the ingredients such as minced pork, minced meat with chopped onion, garlic and lemongrass, add 1 tablespoon oyster sauce, ½ teaspoon pepper, 1 tablespoon cooking oil. Then add a little tapioca starch to make the spring rolls chewy. 

Step 2: Prepare to shape the spring rolls

Cut off the roots of the lemongrass, remove the old leaves on the outside, then cut them short to make handles for the spring rolls. Next, take the marinated meat above and start wrapping the meat around each lemongrass stalk as shown. 

 

You should marinate the meat with a little annatto oil to help the spring rolls have a more beautiful color. 

Step 3: Grill spring rolls with steam fryer 

Put the shaped spring rolls into the steam fryer tray. Then, set the temperature to 165 degrees for 15 minutes. If you want the spring rolls to be golden brown on both sides, turn them over and fry again for about 10 more minutes.

 

Bake spring rolls for 15 minutes at 165 degrees Celsius. 

Step 4: Decorate the dish

Put the grilled spring rolls on a tray lined with banana leaves and add the accompanying vegetables such as watercress, coriander, basil, pineapple, cucumber, green banana, diced carrots... And finally, the standard grilled spring roll dipping sauce.

The soul of nem lui is the dipping sauce. Whether nem lui becomes delicious and flavorful or not depends a lot on your dipping sauce mixing skills. If you do not know how to mix nem lui dipping sauce, please refer to the recipe below:
- 150 grams of sticky rice
- 150 grams of minced meat
- 100 grams of peanuts
- 100 grams of rock sugar (or granulated sugar)
- 1 purple onion, 1 garlic bulb
- Seasonings include: Seasoning powder, pepper, annatto oil, MSG, salt

Ingredients to prepare spring roll dipping sauce. 

Detailed steps to make dipping sauce: 

Step 1: Prepare the ingredients

- Wash the sticky rice twice in water and then soak for about 5-6 hours. After soaking, take out the sticky rice and rinse it with water twice to clean it. 
- Roast the peanuts until cooked, remove the outer shell and crush them. 
- Peel the onions and garlic, wash them, crush them and chop them finely. 

Step 2: Marinate the meat to make dipping sauce 

Put 150 grams of minced meat in a large bowl, then marinate with 1/3 teaspoon of seasoning powder, ½ teaspoon of sugar and 1/3 teaspoon of pepper. Finally, add 1 teaspoon of minced onion and garlic. Use chopsticks to stir well so that the meat absorbs the spices for 10-15 minutes. 

Step 2: Grind sticky rice 

After washing the sticky rice, put it in the Tapuho multi-function blender and blend it with 300ml of filtered water for 15-30 seconds. Once you see the sticky rice is ground into liquid, it's done. 

Step 3: Stir-fry the meat 

Heat the pan and add 1-2 tablespoons of cooking oil. Wait for the oil to heat up, then add chopped onions and garlic and saute until fragrant. When the onions and garlic start to turn golden brown, add the minced meat and stir-fry until the meat is cooked. 

When the meat is almost cooked, add a tablespoon of annatto oil to color the meat. Stir well for a few minutes to let the spices soak in, then turn off the heat. 

Step 4: Cook spring roll dipping sauce 

Boil 1 liter of water then add the stir-fried minced meat above to cook together. Next, slowly add the glutinous rice flour mixture, use a spoon to stir well so that the glutinous rice does not clump. 

Then, reduce the heat and simmer the spring roll dipping sauce for about 50-60 minutes. When the dipping sauce has started to thicken, add 100ml of filtered water and stir well. 

Finally, add more spices including: ½ teaspoon of seasoning powder, ½ teaspoon of MSG, 1 tablespoon of salt and 100 grams of rock sugar. You can adjust the dipping sauce according to your own preferences and taste.
