- Ginger about 300 - 500 grams. 
- White sugar 600 - 1000 grams. 
- 1 lemon

How to make ginger jam with an air fryer

Step 1: Prepare ginger

You should soak the ginger in water to clean all the dirt on the ginger. Then, use a brush to scrub the dirt off the skin, wash the ginger with water several times to clean it completely.

Next, use a knife to scrape off the ginger skin. Wash the ginger again with clean water. Remove the ginger from the basket to drain, then slice it very thinly and place it in a bowl of diluted salt water to soak. 

When soaked in diluted salt water, the ginger will be less spicy and will not turn black. You should soak it for about 30 minutes, then take it out and put it in a basket to drain.

Step 2: Boil ginger 

To make the ginger jam less spicy and more delicious, you should boil the ginger before marinating it with sugar.

Put the soaked ginger in a pot, add water to cover the ginger, boil for about 3 minutes, then turn off the stove, drain the first boiled water. Continue boiling for about 3 more minutes. During this second boiling, you should add 1 teaspoon of lemon juice to the pot. Doing this will make the ginger whiter and more beautiful.

Step 3: Marinate with sugar 

After boiling the ginger, pour it into a basket and rinse it with water about 2-3 times. Let the ginger drain completely before putting it in a bowl. You should marinate the ginger with sugar in a ratio of 2 ginger: 1 sugar. That means for 500 grams of ginger, add 1 kg of sugar to marinate. Next, use chopsticks to mix well so that the ginger absorbs the sugar. Then, you should leave it like that for 3-5 hours so that the sugar can penetrate the ginger and dissolve.

Step 4: Cook and dry ginger jam 

Use a thick-bottomed cast iron pan to cook the ginger jam. Cook over medium heat until it boils, then reduce the heat to low. Remember to stir constantly with chopsticks while cooking the ginger to avoid burning. 

Once the water is thick, add a little vanilla, just a little because too much will make the jam bitter. 

Step 5: Dry ginger jam with air fryer

You put the ginger jam that you just cooked into the air fryer. Note that you should not stack it on top of each other but spread it out evenly so that the jam is dried the most. You should set the temperature to about 100 degrees to dry for 20 minutes.

After about 20 minutes, open the pot to check if the jam is completely dry. You should dry it until the ginger is completely dry and has crystallized sugar around the ginger pieces. 

How to make coconut jam with an air fryer

- 200 grams of shredded young coconut
- 100 grams of white sugar. 
- 15 ml of passion fruit juice
- 3 grams of gardenia powder to create yellow color.

Step 4: Dry the coconut with an air fryer

You need to dry the coconut to help preserve it longer. You should dry it at 90 degrees Celsius for 10 minutes. Then, take the jam tray out, stir it evenly and continue drying it for the second time for another 10 minutes. At this point, your coconut has begun to dry. Next, set the temperature to 80 degrees Celsius and dry it for another 10 minutes (the third time) to create a crystallization diameter and it is done.

How to make honey orange peel jam with air fryer
