How to make meat-stuffed snails with a steam fryer

Ingredients for making stuffed snails include stuffed snails, minced meat, pork paste and other spices. 

Ingredients to prepare 
- 2 kg fresh snails
- 200 grams minced lean shoulder meat. 
- 1 teaspoon pepper
- 1 fresh ginger root. 
- 100 grams white sugar.
- 4 young kaffir lime leaves. 
- 200 grams minced pork paste.
- 10 grams dried shiitake mushrooms. 
- 1 tablespoon vinegar
- 2 fresh chili peppers
- 8 fresh lemongrass stalks
- 2 dried shallots

Making stuffed snails is quite complicated, so you need to do each step very carefully: 

Boil snails with crushed lemongrass to remove the fishy smell.

Step 1: Prepare the ingredients
- After buying the snails, wash them and soak them in clean water and add chili slices. By doing this, the snails will quickly release all the dirt inside. 
- Then, wash the snails 2-3 times under the tap, then take them out and put them in a pot to boil with 2 lemongrass stalks for 10-15 minutes. - When
the snails are cooked, take them out and put them in a bowl of cold water. Then use a fork to take out the snail meat.
- Use salt to rub the snail meat again to remove the slime. Then, put the snails in and wash them again with water and then mince the snail meat.
- Peel off all the old leaves on the outside of the lemongrass and then wash them. Next, take 4 stalks and mince them and cut the remaining 2 into thin slices.
- Wash the lemongrass leaves and cut them into thin strips.
- Wash the chili peppers and then mince them.
- Peel the ginger, crush and chop it finely, divide it into 2 parts, 1 part to marinate and 1 part to make dipping sauce.
- Soak the shiitake mushrooms in boiling water until they expand, then wash, drain, and chop finely.

Step 2: Marinate the snail filling 
- Add the minced meat, minced pork, and minced snail meat above with minced garlic, shallots, lemongrass, chili, lemon leaves, and ginger and mix well. 
- Season with ½ tablespoon of fish sauce, ½ tablespoon of seasoning powder, 1 teaspoon of MSG, 1 teaspoon of white sugar, and 1 teaspoon of ground pepper. 
- Use chopsticks to mix well so that the snail meat absorbs the spices and the filling thickens.

Step 3: Stuff the filling into the snail shells

First, you put the thinly sliced ​​lemongrass leaves into the snail shell. Then, use a spoon to fill the snail's mouth with the meat mixture. You do this repeatedly until all the stuffing is used up.

Put the stuffed snails in a steamer and put them in the steamer to steam.
